#Argaldishchallenge Recipe: Puff pastry tartlet with mozzarella, avocado, cherry and Argal serrano Ham by MJ

In the first chapter of «Tradición Al Plato» bloggers Maria José Martínez, author of the blog Las recetas de MJ, and Mar Varela, «Vamos a CociMar».

Who should win this contest? The recipes they’re preparing are puff pastry tartlet with mozzarella, avocado, cherry and Argal serrano ham and pastry roses with Argal ham, apple and honey. The two bloggers decided to use puff pastry as a basis for their breakfasts, accompanying it with different fresh ingredients and the special touch they get from very thinly sliced Argal ham.

Puff pastry tartlet with mozzarella, avocado, cherry and Argal Ham for a family breakfast

Ingredients (2 people)

For the tartlet:

  • 2 sheets of puff pastry
  • 1 egg to brush the pastry
  • 250g dried chickpeas

For a mozzarella tartlet with avocado and ham:

  • 1 ball of buffalo mozzarella
  • 1 avocado
  • 250g of mixed cherry tomatoes
  • Fresh basil
  • Extra virgin olive oil
  • 1 packet of Argal Serrano ham

For the juice:

  • 4 large oranges

Preparation

  • First, to make the tartlets, cut two rectangles, about 12cm long and 4cm wide. Next, cut 1cm thick strips from the excess pastry. With these strips you are going to make a frame for our rectangle.
  • Preheat oven to 225° with the top and bottom elements.
  • Use a fork to prick the bottom of the tartlets, only inside the frame and place dried chickpeas on the pastry to weigh it down and keep it from rising.
  • Brush the edges of the tartlets with beaten egg. Put them in the oven, lowering the temperature to 200° and bake for 15-20 minutes.
  • Once ready let cool for 15 minutes and they are ready to fill.

To fill the mozzarella and avocado tartlet with ARGAL ham:

Drain the mozzarella, cut into strips and place them on the tart. Then cover the entire tart with slices of avocado. Put some sliced or halved cherry tomatoes on it then top it with thin slices of ham, scattered over the top. A drizzle of extra virgin olive oil and it’s time for breakfast!
