Recipe for toasted cereal bread with peppers, mushrooms, cheese and Argal Serrano Ham

All types of sandwiches are healthy choices if you combine them with the ideal ingredients. Good quality bread, some vegetables, either raw or roasted, a portion of lean or low-fat cold meat, a different dressing. Here’s a quick and easy dinner which is also healthy and tasty! How does that sound?

With cereal wholemeal bread, to give you energy and extra fiber. With roasted piquillo peppers and mushrooms to give it lightness and flavour as well as vitamins and minerals. A cheese that gives it some oiliness, choose your favourite, whether low fat or a light goat cheese. Argal serrano ham for extra protein and a rather surprising flavour. A vinaigrette with olive oil and a little honey for contrast. What more could you ask for? Serve with a green salad and some strawberries for dessert.

Ingredients (for 1 piece):

  • Toasted cereal bread
  • Chestnuts
  • Roasted piquillo peppers
  • Sautéed seasonal mushrooms
  • Thin slice of goat’s cheese or queso fresco
  • 3-4 slices of Argal serrano ham
  • Olive oil, garlic, parsley
  • A dessert spoon of rosemary honey vinaigrette with two tablespoons of extra virgin olive oil

Preparation:

  • Prepare the roasted peppers or buy ready-made ones.
  • Saute seasonal mushrooms (which you have already cleaned and cut) with a little olive oil, garlic and parsley.
  • Roast the chestnuts and peel them.
  • Assemble the toast. Place the roasted pepper on the bread, then the mushrooms, then a slice of goat’s cheese. You can put it in the oven to heat it and melt the cheese slightly. Then prepare some flowers with the Argal serrano ham and place them on top.
  • Drizzle with honey vinaigrette.
