Recipe ideas for a summer picnic day

Whether at the beach, in the countryside or even in a water park, it’s time to enjoy the good weather and have fun in the company of family and friends. Take this opportunity to spend all day outside, and for this we need to prepare a picnic. Simple but tasty, nutritious and healthy food, dishes that can be eaten cold, and make the day even better.

What to bring?

Aside from the typical, classic «everyday» delicacies like tortilla, Russian salad, breaded cordon bleus with cheese, sandwiches, croquettes or pasta salad, we suggest below 4 recipes for everyone’s tastes, rich in essential vitamins and minerals. Don’t forget to add fruit, drinks, and a homemade cake, everyone will thank you!

Ideas

  • One is a vegetable empanada, which we can prepare the day before. Whether hot or cold, it is very tasty, filled with meat or fish, with vegetables or something else. Cut it into individual portions and it’s ready to eat!
  • Another option is to prepare a meat pie or vegetable tart; we suggest a spinach quiche. This recipe is very light since it doesn’t use cream, so it’s easy to eat. You can also prepare it in advance, and even make it in mini individual moulds. However you like it!
  • Falafel is an alternative to croquettes. Falafel is like a meatball or croquette made from chickpea paste. The recipe comes from the Middle East although it is now eaten all over the world. An interesting, fun and easy way to eat pulses, and also good to introduce into children’s diets.
  • Another way to eat salad, that can be prepared in individual portions in recycled jam jars, is in a multilayered sandwich with tomato, lettuce, avocado, sprouting seeds, pineapple, shrimp and Bonnatur cooked ham, etc. We get all the energy of bread, vitamins and minerals from the vegetables and fruit, and protein from the fish and ham … what more could you ask for?

Important

Don’t forget a coolbox to keep the food chilled. This is particularly important when the temperature is high as these dishes can spoil easily. Don’t forget A LOT of water to drink as well! Don’t neglect hydration, which is so important on days spent outdoors with very high temperatures!
