Special New Year recipe with Argal Jamón Ibérico

For this new year, we bring you a special recipe for pan de jamón with mushrooms and gorgonzola. This can work as a side dish, like a new and original type of bread; or it can be a starter, to be eaten by itself or with other delicacies such as cheese, cold meats or Argal patés, or paired with a jam.

Pan de jamón is a Venezuelan recipe, but it has spread to many other countries. The basis is a pastry that is similar to French brioche, which allows for an infinite variety of fillings. This new year recipe contains Argal jamón de reserva, mushrooms and cheese, a delicious combination! But there are many alternatives: a roasted vegetable filling, with aubergine, onion and pepper, or with Argal Extremadura cold meats and olives. Recipe for Pan de jamón with mushrooms and cheese

Ingredients (for 6-8 people)

For the pastry:

  • 500g flour
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 50g of bread yeast
  • 200ml of milk
  • 2 eggs
  • 50g margarine

For the filling:

  • Argal Jamón de reserva enough to cover the dough, to taste
  • Various sautéed mushrooms, to taste
  • Cheddar or other sliced or grated cheese, good for melting

Preparation

Preparing the dough
In a bowl combine the flour, sugar and salt. Add the yeast, eggs and previously melted margarine and mix. Then slowly add the milk and stir to form a dough with an elastic consistency, and let stand one hour in a bowl covered with a damp cloth. When this time has passed, with the help of a rolling pin, roll the dough well in greaseproof paper to form a rectangle about one centimetre thick. Set aside a little ball of dough for the final decorations.

Preparing the filling
Spread out the ingredients on the flattened dough, as preferred. First lay the jamón iberico in slices, then the cheese, mushrooms … and so on until it is covered completely. Then roll the dough up so that that it forms a roll, and close the ends well with milk or egg white. Decorate the roll with the ball of dough that was set aside – some leaves, some bows… Make small holes in the bread and brush it with beaten egg. Then bake at 150° for about 20 minutes.
